Spicy Shrimp Crispy Rice by Thespicyjuju

Crispy rice topped with spicy mayo shrimp and avocado, made in an air fryer.

Ingredients
- 2 cups cooked sushi rice, seasoned lightly with salt and 1 tbsp rice vinegar
- 1 tbsp neutral oil or cooking spray
- 12 oz shrimp, peeled and deveined
- 2 tbsp mayonnaise
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 2 tbsp sliced green onions
- 1/4 tsp cayenne pepper, plus more to finish
- 1 avocado, thinly sliced
- 1 tbsp toasted sesame seeds, optional
Instructions
- Mix the cooked rice with a little salt and rice vinegar, then press it firmly into small molds or a lined pan; chill for at least 2 hours until firm.
- Cut the chilled rice into bite-size rectangles or squares, then lightly brush or spray both sides with oil.
- Air fry the rice at 400°F for 10 to 12 minutes, flipping halfway, until golden and crisp on the edges.
- Stir together the mayonnaise, soy sauce, sesame oil, sugar, green onions, and cayenne pepper until the shrimp is evenly coated.
- Air fry the shrimp at 400°F for 6 to 8 minutes, until pink, opaque, and just cooked through.
- Top each crispy rice piece with avocado slices and spicy shrimp, then finish with extra cayenne and sesame seeds before serving.
