Blueberry Chocolate Pancakes by Thesmokingduo
Fluffy buttermilk pancakes studded with fresh blueberries and rich dark chocolate chunks.

Ingredients
- 1.5 cup all-purpose flour
- 3 tbsp granulated sugar
- 1 tbsp baking powder
- 0.5 tsp salt
- 1.25 cup buttermilk
- 1 large egg
- 3 tbsp unsalted butter, melted
- 1 cup fresh blueberries
- 0.5 cup dark chocolate chips or chunks
Instructions
- Whisk together flour, sugar, baking powder, and salt in a large mixing bowl until combined.
- Whisk buttermilk, egg, and melted butter in a separate bowl until smooth.
- Pour wet ingredients into dry, folding gently with a spatula until just combined; do not overmix.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter per pancake onto the skillet until ready to serve.
- Sprinkle a handful of blueberries and chocolate chunks onto the wet batter of each pancake until ready to serve.
- Cook for 2-3 minutes until bubbles form on the surface and edges look set.
- Flip carefully and cook for another 1-2 minutes until golden brown and cooked through.
