Honey Jalapeño Crispy Fried Wings by Thesapor

Crispy fried wings tossed in a sweet-heat honey jalapeño sauce with homemade ranch.

Ingredients

  • 1.5–2 lbs chicken wings
  • 1 tbsp neutral oil
  • 1 packet sazon
  • 2 tsp Fire and Smoke Society Honey Butter Jalapeño seasoning
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp complete seasoning
  • 1 tsp paprika
  • 1/2 tsp MSG (optional)
  • Salt and pepper, to taste
  • 1/2 cup jalapeño juice (from jar)
  • 1 cup cornstarch
  • Canola oil, for frying
  • Splash of club soda
  • 1/3 cup jalapeño juice (for sauce)
  • 1/2 cup honey
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • 1 tsp Fire and Smoke Society Honey Butter Jalapeño seasoning (for sauce)
  • Sliced jalapeños, to taste
  • Salt, to taste (for sauce)
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup buttermilk
  • 1 packet ranch seasoning
  • 1/4 cup fresh dill, finely chopped
  • 2 tbsp chives, chopped
  • 2 tsp garlic powder (for ranch)
  • 1 tsp garlic paste
  • Salt and pepper, to taste (for ranch)

Instructions

  1. Pat the wings completely dry with paper towels and place them in a large bowl.
  2. Add the neutral oil, sazon, Honey Butter Jalapeño seasoning, garlic powder, onion powder, complete seasoning, paprika, salt, pepper, MSG, and 1/2 cup jalapeño juice. Toss until every wing is evenly coated.
  3. Cover and marinate for at least 3 hours, or overnight for best flavor.
  4. Once marinated, pour off most of the excess marinade, leaving just a little behind to help the coating stick.
  5. Add the cornstarch and a small splash of club soda to the wings. Toss until evenly coated, then let them rest for 10–15 minutes while the oil heats.
  6. Heat canola oil in a deep pot or skillet to 350°F (175°C).
  7. Fry the wings in batches for 8–10 minutes, turning occasionally, until deeply golden, crispy, and the internal temperature reaches 165°F. Transfer to a wire rack to drain.
  8. For the sauce: In a small saucepan over medium-low heat, combine 1/3 cup jalapeño juice, honey, butter, brown sugar, Honey Butter Jalapeño seasoning, sliced jalapeños, and a pinch of salt.
  9. Stir until the butter melts and the sauce is smooth and slightly thickened, about 3–5 minutes. Remove from heat.
  10. Place the hot fried wings in a large bowl, pour the honey jalapeño sauce over them, and toss until every wing is evenly coated.
  11. For the ranch: Whisk together mayonnaise, sour cream, buttermilk, ranch seasoning, fresh dill, a splash of jalapeño juice, chives, garlic powder, garlic paste, salt, and pepper until smooth.
  12. Cover the ranch and refrigerate for at least 30 minutes before serving to allow the flavors to develop. Serve wings with ranch on the side.
