Ingredients

  • 1.5–2 lbs chicken wings
  • 1 tbsp neutral oil
  • 1 packet sazon seasoning
  • 2 tsp + 1 tsp Fire and Smoke Society Honey Butter Jalapeño seasoning (divided)
  • 2 tsp garlic powder (for wings)
  • 2 tsp onion powder
  • 1 tsp complete seasoning
  • 1 tsp paprika
  • 1/2 tsp MSG (optional)
  • Salt and pepper, to taste
  • 1/2 cup + 1/3 cup jalapeño juice (divided)
  • 1 cup cornstarch
  • Canola oil, for frying
  • Splash of club soda
  • 1/2 cup honey
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • 2–3 jalapeños, sliced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1 cup buttermilk
  • 1 packet ranch seasoning
  • 1/4 cup fresh dill, finely chopped
  • 2 tbsp chives, chopped
  • 2 tsp garlic powder (for ranch)
  • 1 tsp garlic paste

Instructions

  1. Pat the wings completely dry with paper towels and place them in a large bowl.
  2. Add the neutral oil, sazon, 2 tsp Honey Butter Jalapeño seasoning, garlic powder, onion powder, complete seasoning, paprika, salt, pepper, MSG, and 1/2 cup jalapeño juice. Toss until every wing is evenly coated.
  3. Cover and marinate in the refrigerator for at least 3 hours, or overnight for best flavor.
  4. Make the ranch: whisk together mayonnaise, sour cream, buttermilk, ranch seasoning packet, fresh dill, a splash of jalapeño juice, chives, 2 tsp garlic powder, garlic paste, salt, and pepper until smooth. Cover and refrigerate for at least 30 minutes.
  5. Once wings are marinated, pour off most of the excess marinade, leaving just a little behind to help the coating stick.
  6. Add the cornstarch and a small splash of club soda to the wings. Toss until evenly coated. Let them rest 10–15 minutes while the oil heats.
  7. Heat canola oil in a deep pot or skillet to 350°F (175°C).
  8. Fry the wings in batches for 8–10 minutes, turning occasionally, until deeply golden, crispy, and the internal temperature reaches 165°F. Transfer to a wire rack to drain.
  9. Make the sauce: in a small saucepan over medium-low heat, combine 1/3 cup jalapeño juice, honey, butter, brown sugar, 1 tsp Honey Butter Jalapeño seasoning, sliced jalapeños, and a pinch of salt. Stir until butter melts and sauce is smooth and slightly thickened, about 3–5 minutes. Remove from heat.
  10. Place the hot fried wings in a large bowl, pour the honey jalapeño sauce over them, and toss until every wing is evenly coated. Serve immediately with the chilled ranch.
