Crispy Honey Jalapeño Wings With Ranch by Thesapor

Marinated fried chicken wings tossed in a sticky honey jalapeño sauce, served with homemade dill ranch.

Ingredients
- 1.5–2 lbs chicken wings
- 1 tbsp neutral oil
- 1 packet sazon seasoning
- 2 tsp + 1 tsp Fire and Smoke Society Honey Butter Jalapeño seasoning (divided)
- 2 tsp garlic powder (for wings)
- 2 tsp onion powder
- 1 tsp complete seasoning
- 1 tsp paprika
- 1/2 tsp MSG (optional)
- Salt and pepper, to taste
- 1/2 cup + 1/3 cup jalapeño juice (divided)
- 1 cup cornstarch
- Canola oil, for frying
- Splash of club soda
- 1/2 cup honey
- 2 tbsp butter
- 1 tbsp brown sugar
- 2–3 jalapeños, sliced
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup buttermilk
- 1 packet ranch seasoning
- 1/4 cup fresh dill, finely chopped
- 2 tbsp chives, chopped
- 2 tsp garlic powder (for ranch)
- 1 tsp garlic paste
Instructions
- Pat the wings completely dry with paper towels and place them in a large bowl.
- Add the neutral oil, sazon, 2 tsp Honey Butter Jalapeño seasoning, garlic powder, onion powder, complete seasoning, paprika, salt, pepper, MSG, and 1/2 cup jalapeño juice. Toss until every wing is evenly coated.
- Cover and marinate in the refrigerator for at least 3 hours, or overnight for best flavor.
- Make the ranch: whisk together mayonnaise, sour cream, buttermilk, ranch seasoning packet, fresh dill, a splash of jalapeño juice, chives, 2 tsp garlic powder, garlic paste, salt, and pepper until smooth. Cover and refrigerate for at least 30 minutes.
- Once wings are marinated, pour off most of the excess marinade, leaving just a little behind to help the coating stick.
- Add the cornstarch and a small splash of club soda to the wings. Toss until evenly coated. Let them rest 10–15 minutes while the oil heats.
- Heat canola oil in a deep pot or skillet to 350°F (175°C).
- Fry the wings in batches for 8–10 minutes, turning occasionally, until deeply golden, crispy, and the internal temperature reaches 165°F. Transfer to a wire rack to drain.
- Make the sauce: in a small saucepan over medium-low heat, combine 1/3 cup jalapeño juice, honey, butter, brown sugar, 1 tsp Honey Butter Jalapeño seasoning, sliced jalapeños, and a pinch of salt. Stir until butter melts and sauce is smooth and slightly thickened, about 3–5 minutes. Remove from heat.
- Place the hot fried wings in a large bowl, pour the honey jalapeño sauce over them, and toss until every wing is evenly coated. Serve immediately with the chilled ranch.
