Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup (113g) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup (105g) granulated sugar
  • 1/2 cup (118g) light brown sugar, packed
  • 2 1/4 cups (270g) all-purpose flour
  • 1/2 cup (130g) sour cream
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • STREUSEL: 2/3 cup (85g) all-purpose flour
  • STREUSEL: 1/3 cup (80g) brown sugar
  • STREUSEL: 5 tbsp (70g) unsalted butter, melted
  • STREUSEL: 1 1/2 tsp cinnamon
  • STREUSEL: pinch of salt
  • CINNAMON SUGAR: 1/4 cup (50g) brown sugar
  • CINNAMON SUGAR: 1 tsp cinnamon
  • ICING: 1 cup powdered sugar
  • ICING: 1/2 tsp vanilla extract
  • ICING: 2–3 tbsp heavy cream

Instructions

  1. Preheat oven to 425°F (220°C). Line or grease a 1.5-pound loaf pan.
  2. Make the streusel: combine flour, brown sugar, cinnamon, and salt in a bowl. Stir in melted butter until crumbly. Set aside — you'll use about 1/4 cup for the middle layer and the rest on top.
  3. Make the cinnamon sugar: stir together brown sugar and cinnamon in a small bowl. Set aside.
  4. In a large bowl, whisk together mashed bananas, melted butter, granulated sugar, brown sugar, and eggs until smooth.
  5. Stir in sour cream and vanilla until well combined.
  6. Add flour, baking soda, and salt. Fold just until no dry streaks remain — do not overmix.
  7. Pour half the batter into the prepared loaf pan and spread evenly.
  8. Sprinkle 1/4 cup of streusel and all of the cinnamon sugar evenly over the batter.
  9. Pour the remaining batter on top and spread gently, then scatter the remaining streusel over the surface.
  10. Bake at 425°F (220°C) for 10 minutes to set the top.
  11. Without opening the oven, reduce temperature to 350°F (175°C) and continue baking for 45–55 minutes, until a toothpick inserted in the center comes out with moist crumbs. If the streusel browns too quickly, loosely tent with foil during the last 15–20 minutes.
  12. Cool in the pan for 15–20 minutes, then transfer to a wire rack to cool completely.
