Simple pan-cooked potato and egg breakfast topped with avocado, cheese, and bacon bits.

Ingredients
- 1 tbsp oil
- 1 medium peeled potato
- 2 large eggs
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp avocado, diced
- 2 tbsp shredded cheese
- 1 tbsp bacon bits
- 1 tsp hot sauce, optional
Instructions
- Heat the oil in a skillet over medium heat for 1 minute until shimmering.
- Slice the peeled potato into thin rounds or half-moons, then arrange them in the pan in a single layer.
- Cook the potato slices for 4-5 minutes until the bottoms start turning golden.
- Crack the eggs into the pan beside or over the potatoes, then season with salt and pepper.
- Cover and cook for 4-6 minutes until the egg whites are set and the potatoes are tender.
- Remove from the pan, top with avocado, cheese, bacon bits, and hot sauce, then serve immediately.
