Simple pan-cooked potato and egg breakfast topped with avocado, cheese, and bacon bits.

Ingredients

  • 1 tbsp oil
  • 1 medium peeled potato
  • 2 large eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp avocado, diced
  • 2 tbsp shredded cheese
  • 1 tbsp bacon bits
  • 1 tsp hot sauce, optional

Instructions

  1. Heat the oil in a skillet over medium heat for 1 minute until shimmering.
  2. Slice the peeled potato into thin rounds or half-moons, then arrange them in the pan in a single layer.
  3. Cook the potato slices for 4-5 minutes until the bottoms start turning golden.
  4. Crack the eggs into the pan beside or over the potatoes, then season with salt and pepper.
  5. Cover and cook for 4-6 minutes until the egg whites are set and the potatoes are tender.
  6. Remove from the pan, top with avocado, cheese, bacon bits, and hot sauce, then serve immediately.
