Sashimi-grade tuna slices served in a charred habanero and tortilla sauce with soy and lime.

Ingredients

  • 400 g fresh sashimi-grade tuna
  • 1 habanero pepper, charred and seeded
  • 0.5 cup soy sauce
  • 0.25 cup rice vinegar
  • 2 limes, juiced
  • 1 garlic clove, charred
  • 1 cm fresh ginger
  • 0.5 cup sesame oil
  • 1 corn tortilla, charred
  • 0.25 cup fresh cilantro
  • 0.5 red onion, thinly sliced
  • 2 tbsp green onion, chopped
  • 1 avocado, sliced
  • 1 tbsp sesame seeds
  • 0.5 cucumber, sliced

Instructions

  1. Char the habanero, garlic clove, and tortilla over an open flame or in a dry pan until blackened in spots.
  2. Place the charred habanero, garlic, tortilla, soy sauce, rice vinegar, lime juice, ginger, sesame oil, and cilantro into a blender.
  3. Blend on high speed until the sauce is completely smooth and emulsified.
  4. Slice the fresh tuna into thin sashimi-style pieces and arrange them on a serving platter.
  5. Pour the prepared sauce over the tuna slices.
  6. Garnish the dish with sliced red onion, green onion, avocado, cucumber, and sesame seeds before serving.
