Sashimi-grade tuna slices served in a charred habanero and tortilla sauce with soy and lime.

Ingredients
- 400 g fresh sashimi-grade tuna
- 1 habanero pepper, charred and seeded
- 0.5 cup soy sauce
- 0.25 cup rice vinegar
- 2 limes, juiced
- 1 garlic clove, charred
- 1 cm fresh ginger
- 0.5 cup sesame oil
- 1 corn tortilla, charred
- 0.25 cup fresh cilantro
- 0.5 red onion, thinly sliced
- 2 tbsp green onion, chopped
- 1 avocado, sliced
- 1 tbsp sesame seeds
- 0.5 cucumber, sliced
Instructions
- Char the habanero, garlic clove, and tortilla over an open flame or in a dry pan until blackened in spots.
- Place the charred habanero, garlic, tortilla, soy sauce, rice vinegar, lime juice, ginger, sesame oil, and cilantro into a blender.
- Blend on high speed until the sauce is completely smooth and emulsified.
- Slice the fresh tuna into thin sashimi-style pieces and arrange them on a serving platter.
- Pour the prepared sauce over the tuna slices.
- Garnish the dish with sliced red onion, green onion, avocado, cucumber, and sesame seeds before serving.
