Tía's Spectacular Miso Mussels by Themexifoodie
Steamed mussels served in a savory white wine and miso sauce with blended tomato and bell peppers.

Ingredients
- 2 tomatoes
- 2 bunches parsley
- 2 shallots
- 2 bell peppers
- 4 garlic cloves
- 1 chili piquín
- 1 tsp miso paste
- 1.25 cup white wine
- 4 tbsp butter
- 1 kg mussels
- 1 tsp salt
Instructions
- Clean the mussels thoroughly under cold running water and remove any beards.
- Place tomatoes, parsley, shallots, bell peppers, garlic, chili, and salt in a blender and process until a smooth aliño sauce is formed.
- Heat butter in a large pot over medium-high heat and add the blended aliño mixture.
- Stir in the miso paste and bring the mixture to a gentle simmer
- Add the mussels to the pot and pour in the white wine.
- Cover the pot and steam for approximately 3 minutes, or until the shells have fully opened.
- Discard any mussels that remain closed and serve immediately.
