Classic, moist vanilla cake featuring a delicate crumb and a light, golden finish.

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 1/2 cup chambiko (or yogurt)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla essence

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a standard cake pan.
  2. Whisk the eggs and sugar in a large bowl until the mixture is pale and slightly frothy, about 3-5 minutes.
  3. Slowly pour in the vegetable oil and vanilla essence, whisking continuously until fully incorporated.
  4. Stir in the chambiko (or yogurt) until the batter is smooth.
  5. Sift the flour, baking powder, and salt together, then fold into the wet ingredients until just combined.
  6. Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
