Vanilla Cake by Thehalfricanfoodie
Classic, moist vanilla cake featuring a delicate crumb and a light, golden finish.

Ingredients
- 1 1/2 cup all-purpose flour
- 1 cup granulated sugar
- 3 large eggs
- 1 cup vegetable oil
- 1/2 cup chambiko (or yogurt)
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla essence
Instructions
- Preheat your oven to 180°C (350°F) and grease a standard cake pan.
- Whisk the eggs and sugar in a large bowl until the mixture is pale and slightly frothy, about 3-5 minutes.
- Slowly pour in the vegetable oil and vanilla essence, whisking continuously until fully incorporated.
- Stir in the chambiko (or yogurt) until the batter is smooth.
- Sift the flour, baking powder, and salt together, then fold into the wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 10 minutes before transferring to a wire rack to cool completely.
