Deeply flavorful chocolate cake with a tender crumb, finished with a simple pour-over chocolate glaze.

Ingredients

  • 1/2 cup cocoa powder
  • 1 cup hot water
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 2 tsp vanilla essence
  • 2 1/6 cup all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp salt
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking tray or cake pan with parchment paper.
  2. Bloom the cocoa powder by whisking it into the 1 cup of hot water until smooth.
  3. Stir in the white and brown sugars until fully combined.
  4. Whisk in the eggs one at a time, followed by the oil and vanilla essence.
  5. Add the flour, baking powder, and salt to the mixture, stirring until just combined.
  6. Pour in the milk and mix gently until the batter is smooth and uniform.
  7. Pour the batter into the prepared baking tray.
  8. Bake for 25-30 minutes, or until a skewer inserted into the center comes out with a few moist crumbs.
