Ingredients
- 1 kg (2.2 lbs) chicken leg quarters, skinless and scored
- 1 cup plain greek yogurt
- 2 tbsp ginger-garlic paste
- 1 tbsp red chili powder
- 1 tbsp garam masala
- 1 tsp turmeric powder
- 1 tbsp lemon juice
- 1 tsp salt (adjust to taste)
- 1 tbsp vegetable oil
Instructions
- Whisk together yogurt, ginger-garlic paste, chili powder, garam masala, turmeric, lemon juice, salt, and oil in a large bowl to create the marinade over medium heat until heated through, about 5 min.
- Score the chicken pieces deeply with a sharp knife to allow the marinade to penetrate the meat until ready to serve.
- Coat the chicken thoroughly with the marinade, cover, and refrigerate for at least 4 hours, preferably overnight.
- Preheat your oven to 220°C (425°F) or prepare a charcoal grill.
- Arrange the chicken on a wire rack over a baking sheet and roast for 20-25 minutes, turning once, until the edges are charred and the internal temperature reaches 74°C (165°F).
