One-Pan Miso Butter Salmon by Thecrystalcookbook
Golden salmon, tender cabbage, and a simple miso sauce come together for an easy 30-minute dinner.

Ingredients
- 2 salmon fillets (about 6 oz / 170g each), skin on
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp white miso paste
- 2 tbsp unsalted butter, softened
- 1 tbsp soy sauce
- 1 tbsp mirin
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1/2 small head green cabbage (about 4 cups), chopped
- 1 tbsp sesame seeds, for garnish
- 2 green onions, sliced, for garnish
Instructions
- Preheat your oven to 200°C (400°F).
- In a small bowl, combine the miso paste, softened butter, soy sauce, mirin, minced garlic, and grated ginger. Mix well until a smooth sauce forms.
- Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper until ready to serve.
- Heat a large oven-safe skillet over medium-high heat. Once hot, add a touch of oil if needed, then place the salmon fillets skin-side down and sear for 5 minutes until the skin is crispy and golden.
- Flip the salmon fillets and cook for another 2 minutes on the flesh side. Carefully remove the salmon from the skillet and set it aside on a plate.
- Add the chopped green cabbage to the same skillet. Sauté over medium heat for 5-7 minutes, stirring occasionally, until the cabbage is tender-crisp.
- Pour the prepared miso butter sauce over the cabbage in the skillet. Stir to combine and bring the sauce to a gentle simmer for 1-2 minutes.
- Return the seared salmon fillets to the skillet, placing them on top of the cabbage and sauce mixture. Transfer the skillet to the preheated oven at 375°F until golden and cooked through, about 25 min.
- Bake for 10 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish the finished dish with sesame seeds and sliced green onions before serving immediately until ready to serve.
