One-Pan Miso Butter Salmon by Thecrystalcookbook

Golden salmon, tender cabbage, and a simple miso sauce come together for an easy 30-minute dinner.

Ingredients

  • 2 salmon fillets (about 6 oz / 170g each), skin on
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp white miso paste
  • 2 tbsp unsalted butter, softened
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 small head green cabbage (about 4 cups), chopped
  • 1 tbsp sesame seeds, for garnish
  • 2 green onions, sliced, for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a small bowl, combine the miso paste, softened butter, soy sauce, mirin, minced garlic, and grated ginger. Mix well until a smooth sauce forms.
  3. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper until ready to serve.
  4. Heat a large oven-safe skillet over medium-high heat. Once hot, add a touch of oil if needed, then place the salmon fillets skin-side down and sear for 5 minutes until the skin is crispy and golden.
  5. Flip the salmon fillets and cook for another 2 minutes on the flesh side. Carefully remove the salmon from the skillet and set it aside on a plate.
  6. Add the chopped green cabbage to the same skillet. Sauté over medium heat for 5-7 minutes, stirring occasionally, until the cabbage is tender-crisp.
  7. Pour the prepared miso butter sauce over the cabbage in the skillet. Stir to combine and bring the sauce to a gentle simmer for 1-2 minutes.
  8. Return the seared salmon fillets to the skillet, placing them on top of the cabbage and sauce mixture. Transfer the skillet to the preheated oven at 375°F until golden and cooked through, about 25 min.
  9. Bake for 10 minutes, or until the salmon is cooked through and flakes easily with a fork.
  10. Garnish the finished dish with sesame seeds and sliced green onions before serving immediately until ready to serve.
