Mexican-Inspired Ground Beef Rice Skillet by Thechowdown

Savory ground beef and fluffy rice simmered in a spiced tomato base with bell peppers.

Ingredients
- 450g (1 lb) ground beef
- 1 cup long-grain white rice, uncooked
- 1 yellow onion, diced
- 1 bell pepper, diced
- 2 tbsp taco seasoning
- 8 oz tomato sauce
- 2 cup beef broth
- 1 tbsp vegetable oil
- 1/2 tsp salt (adjust to taste)
Instructions
- Heat oil in a large skillet over medium-high heat and brown the ground beef until cooked through, about 5-7 minutes.
- Add the diced onion and bell pepper to the skillet, sautéing until softened, about 4-5 minutes.
- Stir in the uncooked rice and taco seasoning, coating the rice evenly for 1-2 minutes.
- Pour in the tomato sauce and beef broth, stirring to combine all ingredients.
- Reduce heat to low, cover the skillet, and simmer for 15-18 minutes until the rice is tender and liquid is absorbed.
- Remove from heat and fluff with a fork before serving.
