Velvety white bean dip infused with roasted garlic and bright lemon, perfect for dipping fresh vegetables.

Ingredients

  • 400g (15 oz) canned cannellini beans, rinsed and drained
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Combine the drained white beans, minced garlic, lemon juice, salt, and pepper in a food processor.
  2. Pulse the mixture for 30 seconds until the beans begin to break down.
  3. Stream in the olive oil while the processor is running on low speed for 1 minute until the mixture becomes smooth and creamy.
  4. Transfer the dip to a serving bowl and garnish with chopped fresh parsley before serving.
