Velvety white bean dip infused with roasted garlic and bright lemon, perfect for dipping fresh vegetables.

Ingredients
- 400g (15 oz) canned cannellini beans, rinsed and drained
- 2 cloves garlic, minced
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Combine the drained white beans, minced garlic, lemon juice, salt, and pepper in a food processor.
- Pulse the mixture for 30 seconds until the beans begin to break down.
- Stream in the olive oil while the processor is running on low speed for 1 minute until the mixture becomes smooth and creamy.
- Transfer the dip to a serving bowl and garnish with chopped fresh parsley before serving.
