Tender, juicy meatballs featuring a blend of ground meats and fresh herbs with a broiled crust.

Ingredients

  • 1 lb ground beef (80/20)
  • 1 lb ground pork
  • 2 slices crusty white bread, torn into pieces
  • 1/2 cup whole milk
  • 1/2 cup pecorino romano cheese, grated
  • 1 small yellow onion, finely minced
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Soak the torn bread in milk in a small bowl for 5-10 minutes until completely soft, then squeeze out excess liquid.
  2. Combine ground beef, ground pork, soaked bread, onion, garlic, parsley, basil, pecorino romano, salt, and pepper in a large mixing bowl.
  3. Mix ingredients gently by hand until just combined, being careful not to overwork the meat.
  4. Form the mixture into golf-ball sized rounds, approximately 2 inches in diameter.
  5. Arrange meatballs on a parchment-lined baking sheet and bake at 400°F (200°C) for 20 minutes.
  6. Switch the oven to broil and cook for an additional 3-5 minutes until the exterior is browned and crispy.
