Baked Italian Meatballs by Thechowdown

Ingredients
- 1 lb ground beef (80/20)
- 1 lb ground pork
- 2 slices crusty white bread, torn into pieces
- 1/2 cup whole milk
- 1/2 cup pecorino romano cheese, grated
- 1 small yellow onion, finely minced
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Soak the torn bread in milk in a small bowl for 5-10 minutes until completely soft, then squeeze out excess liquid.
- Combine ground beef, ground pork, soaked bread, onion, garlic, parsley, basil, pecorino romano, salt, and pepper in a large mixing bowl.
- Mix ingredients gently by hand until just combined, being careful not to overwork the meat.
- Form the mixture into golf-ball sized rounds, approximately 2 inches in diameter.
- Arrange meatballs on a parchment-lined baking sheet and bake at 400°F (200°C) for 20 minutes.
- Switch the oven to broil and cook for an additional 3-5 minutes until the exterior is browned and crispy.
