Quick and energy-efficient sticky toffee pudding made entirely by hand in the air fryer.

Ingredients
- 150g (5.3 oz) pitted dates, chopped
- 1 tsp bicarbonate of soda
- 100ml (3.4 fl oz) boiling water
- 50g (1.8 oz) unsalted butter, softened
- 75g (2.6 oz) light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 150g (5.3 oz) self-raising flour
- 1/2 tsp salt
- 150ml (5 fl oz) toffee sauce (store-bought or homemade)
Instructions
- Preheat your air fryer to 180°C (356°F).
- Place chopped dates in a bowl, sprinkle with bicarbonate of soda, and pour over the boiling water. Stir well and set aside to cool slightly.
- In a separate bowl, cream together the softened butter and light brown sugar until smooth. Beat in the egg and vanilla extract until well combined.
- Gently fold in the flour and salt until just combined. Do not overmix.
- Pour the date mixture into the batter and stir until just incorporated.
- Divide the batter evenly between 6 greased ramekins or a greased air fryer-safe dish.
- Place the ramekins/dish in the air fryer basket and cook for 18-20 minutes, or until a skewer inserted into the center comes out clean.
- Warm the toffee sauce gently and pour over the puddings before serving.
