Quick and energy-efficient sticky toffee pudding made entirely by hand in the air fryer.

Ingredients

  • 150g (5.3 oz) pitted dates, chopped
  • 1 tsp bicarbonate of soda
  • 100ml (3.4 fl oz) boiling water
  • 50g (1.8 oz) unsalted butter, softened
  • 75g (2.6 oz) light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 150g (5.3 oz) self-raising flour
  • 1/2 tsp salt
  • 150ml (5 fl oz) toffee sauce (store-bought or homemade)

Instructions

  1. Preheat your air fryer to 180°C (356°F).
  2. Place chopped dates in a bowl, sprinkle with bicarbonate of soda, and pour over the boiling water. Stir well and set aside to cool slightly.
  3. In a separate bowl, cream together the softened butter and light brown sugar until smooth. Beat in the egg and vanilla extract until well combined.
  4. Gently fold in the flour and salt until just combined. Do not overmix.
  5. Pour the date mixture into the batter and stir until just incorporated.
  6. Divide the batter evenly between 6 greased ramekins or a greased air fryer-safe dish.
  7. Place the ramekins/dish in the air fryer basket and cook for 18-20 minutes, or until a skewer inserted into the center comes out clean.
  8. Warm the toffee sauce gently and pour over the puddings before serving.
