Ingredients

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 tbsp soy sauce (for marinade)
  • 1 tsp sesame oil (for marinade)
  • 1 tbsp cornstarch (for marinade)
  • 1 lb broccoli florets
  • 2 tbsp vegetable oil, divided
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/4 cup beef broth or water
  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce (for sauce)
  • 1 tsp sesame oil (for sauce)
  • 1 tsp cornstarch (for sauce)
  • 1/4 cup water (for sauce)

Instructions

  1. Marinate the beef: In a bowl, combine sliced beef with 1 tbsp soy sauce, 1 tsp sesame oil, and 1 tbsp cornstarch. Mix well and let sit for at least 15 minutes.
  2. Prepare the broccoli: Blanch the broccoli florets in boiling water for 1-2 minutes until bright green and slightly tender-crisp. Drain and set aside.
  3. Make the sauce: In a small bowl, whisk together beef broth (or water), oyster sauce, 1 tbsp soy sauce, 1 tsp sesame oil, and 1 tsp cornstarch. Set aside.
  4. Stir-fry the aromatics: Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and grated ginger, stir-frying until fragrant, about 30 seconds.
  5. Cook the beef: Add the marinated beef to the wok in a single layer. Cook for 2-3 minutes per side, until browned and cooked through. Remove beef from the wok and set aside.
  6. Combine and thicken: Add the remaining 1 tbsp vegetable oil to the wok. Add the blanched broccoli and stir-fry for 1 minute. Pour the prepared sauce into the wok and bring to a simmer, stirring constantly until thickened, about 1-2 minutes.
  7. Finish the dish: Return the cooked beef to the wok with the broccoli and sauce. Toss to combine and heat through for about 1 minute.
  8. Serve immediately over steamed rice.
