easy Greek Pasta Salad is the perfect side dish for any summer BBQ or potluck.

Ingredients

  • 500 dried pasta spirals
  • 1 cup chopped cherry tomatoes
  • 1 cup chopped cucumber
  • 1 cup sliced olives
  • 0.5 cup diced red onion
  • 0.5 cup crumbled feta
  • 0.5 cup olive oil
  • 0.25 cup red wine vinegar
  • 1 teaspoon sea salt
  • 1 teaspoon dried oregano
  • 1 teaspoon sugar
  • 2 cloves garlic, crushed
  • 1/2 tsp (adjust to taste) cracked pepper

Instructions

  1. Cook the pasta according to package directions until al dente.
  2. Drain the pasta and allow it to cool.
  3. Add the cooled pasta and all other salad ingredients to a large salad bowl.
  4. Make the dressing by adding all dressing ingredients to a jar and shaking well to combine.
  5. Pour the dressing over the salad and mix together well
  6. Refrigerate The pasta salad will keep well in the fridge for 3-4 days.
