Creamy Tuscan Chicken by The Good Bite

Tender chicken breasts in a rich, creamy Tuscan sauce with sun-dried tomatoes and spinach.

Ingredients

  • 2 chicken breasts (approx. 400g total)
  • 2 tbsp extra virgin olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic granules
  • 1 tsp onion granules
  • 1 pinch salt
  • 15g unsalted butter
  • 2 shallots, finely chopped
  • 1 sweet red pepper, finely chopped
  • 2 cloves garlic, crushed
  • 1 tbsp tomato puree
  • 100g cherry tomatoes, halved
  • 200ml chicken stock
  • 1/2 tbsp dried oregano
  • 100ml reduced-fat crème fraîche
  • 15g Parmesan cheese, grated
  • 1 handful fresh spinach

Instructions

  1. Preheat your oven to 190°C (375°F). Season the chicken breasts with smoked paprika, garlic granules, onion granules, and a pinch of salt.
  2. Heat the olive oil in a large oven-safe skillet or pan over medium-high heat. Sear the seasoned chicken breasts for 3-4 minutes per side until golden brown.
  3. Transfer the skillet with the chicken to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  4. While the chicken is in the oven, melt the butter in a separate saucepan over medium heat.
  5. Add the finely chopped shallots, sweet red pepper, and crushed garlic to the saucepan. Sauté for 5-7 minutes until softened.
  6. Stir in the tomato puree and cook for 1 minute until fragrant.
  7. Pour in the chicken stock and add the halved cherry tomatoes and dried oregano. Bring to a simmer and cook for 5-7 minutes until the tomatoes begin to soften.
  8. Stir in the reduced-fat crème fraîche and grated Parmesan cheese until the sauce is smooth and creamy.
  9. Add the handful of fresh spinach to the sauce and stir until it wilts, about 1-2 minutes.
  10. Remove the chicken from the oven. You can either place the cooked chicken breasts into the Tuscan sauce in the saucepan to coat, or spoon the sauce over the chicken in the skillet.
  11. Serve the creamy Tuscan chicken hot, optionally with rice or your favorite side.
