Juicy Doner Kebab Sandwich by The Golden Balance
Made with Ground beef, 80/20 lean, Medium onion, grated, and Plain yogurt.

Ingredients
- 1 lb Ground beef, 80/20 lean
- 1 Medium onion, grated
- 3 tbsp Plain yogurt
- 1 tsp Garlic powder
- 1 tsp Paprika
- ½ tsp Chili powder (or more, to taste)
- ½ tsp Salt
- ¼ tsp Black pepper
- 2 Roma tomatoes, for assembly
- 1 Jalapeño, sliced, for assembly
- 4 Pita breads
- ¼ cup Tahini sauce (or your favorite kebab sauce)
- 1 tbsp Pomegranate molasses, for drizzling
- 1 tsp Sumac, for sprinkling
Instructions
- In a large mixing bowl, combine the grated onion, ground beef, yogurt, garlic powder, paprika, chili powder, salt, and black pepper. Using gloved hands, thoroughly mix and knead the ingredients for 2-3 minutes until well combined and slightly pasty, ensuring the spices are evenly distributed.
- Lay a large piece of parchment paper on a clean work surface. Place the seasoned beef mixture in the center and cover it with another piece of parchment paper. Using your hands or a rolling pin, carefully spread the mixture into a very thin, even layer, approximately 1/8 to 1/4 inch thick.
- Starting from one end, tightly roll the thinly spread beef mixture into a cylindrical shape, resembling a large cigar, using the bottom piece of parchment paper to assist in rolling and maintaining its form. Pinch the ends to seal a little.
- Preheat your oven to 400°F (200°C). Prepare a baking sheet lined with parchment paper. If you have a shish kebab skewer, carefully thread the beef log onto it. Otherwise, place the rolled beef directly on the prepared baking sheet.
- Place the beef log in the preheated oven and bake for 15 minutes. This initial bake will set the shape and cook the meat while keeping it juicy. Remove from the oven.
- Carefully unroll the parchment paper from the beef log. Using a sharp knife, thinly shave the cooked beef from the roll, creating tender, flakey strips. Arrange the shaved beef strips in a single layer on the baking sheet.
- Return the baking sheet with the shaved beef to the oven under a high broil setting for 2-4 minutes, watching carefully. This step will crisp up the edges slightly and add color. Remove when beautifully browned and slightly crispy.
- Warm the pita breads according to package directions. Heap a generous portion of the shaved doner kebab meat onto each warm pita.
- Top the meat with slices of fresh tomato, spicy jalapeño, a drizzle of tahini sauce, and a touch of pomegranate molasses. Finish with a sprinkle of sumac for a bright, tangy flavor.
- Serve immediately and enjoy your homemade doner kebab sandwich.
