Anytime Tahini Chocolate Chunk Cookies by The Fit Feast
Chewy oat cookies featuring rich tahini, dark chocolate chunks, and a hint of toasted desiccated coconut.

Ingredients
- 0.5 cup tahini
- 0.33 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup rolled oats
- 0.33 cup desiccated coconut
- 1 tbsp collagen powder
- 1 tsp baking powder
- 3.5 oz dark chocolate, chopped
- 0.5 cup pecans, chopped
- 1/2 tsp sea salt
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- In a large bowl, whisk together the tahini, coconut sugar, egg, and vanilla extract until the mixture is smooth and emulsified.
- Fold in the oats, desiccated coconut, baking powder, chopped dark chocolate, pecans, and collagen powder until well combined.
- Scoop the dough into 12 balls, place them onto the prepared tray, and use your palm to gently flatten each one.
- Sprinkle a pinch of sea salt over the top of each cookie.
- Bake for 13 minutes until the edges are golden brown but the centers remain soft and slightly gooey.
