Moist Chocolate Cake by That Hungrybelly

Decadent, moist chocolate cake with a rich crumb and deep cocoa flavor throughout.

Ingredients

  • 250g (2 cup) all-purpose flour
  • 400g (2 cup) granulated sugar
  • 75g (3/4 cup) unsweetened cocoa powder
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 240ml (1 cup) whole milk
  • 120ml (1/2 cup) vegetable oil
  • 2 tsp vanilla extract
  • 240ml (1 cup) boiling water

Instructions

  1. Preheat oven to 175°C (350°F) and grease two 9-inch round cake pans.
  2. Whisk together flour, sugar, cocoa, baking powder, baking soda, and salt in a large bowl over medium heat until heated through, about 5 min.
  3. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes until smooth.
  4. Stir in boiling water by hand until combined; the batter will be very thin.
  5. Pour batter evenly into prepared pans until ready to serve.
  6. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
