Tiramisu Cookies by Testouriamine
Soft coffee-infused cookies layered with a creamy mascarpone filling and a dusting of cocoa powder.

Ingredients
- 250g (2 cup) all-purpose flour
- 150g (3/4 cup) granulated sugar
- 115g (1/2 cup) unsalted butter, softened
- 1 large egg
- 2 tbsp instant coffee powder dissolved in 1 tbsp hot water
- 1 tsp baking powder
- 250g (1 cup) mascarpone cheese (for filling)
- 50g (1/4 cup) powdered sugar (for filling)
- 2 tbsp cocoa powder (for dusting)
Instructions
- Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Cream the butter and sugar in a large bowl until light and fluffy, about 3 minutes.
- Beat in the egg and the coffee mixture until fully combined.
- Fold in the flour and baking powder until a soft dough forms.
- Scoop tablespoon-sized portions onto the baking sheet and bake for 10-12 minutes until edges are set.
- Cool the cookies completely on a wire rack before assembling until ready to serve.
- Whisk the mascarpone and powdered sugar together until smooth to create the filling.
- Spread a teaspoon of the mascarpone mixture onto the flat side of one cookie and top with another to create a sandwich until ready to serve.
- Dust the tops generously with cocoa powder before serving until ready to serve.
