Avocado Toast with Salmon and Shrimp by Tay Liicious

Toasted sourdough topped with creamy avocado, Boursin cheese, fresh cherry tomatoes, and seared shrimp or salmon.

Ingredients

  • 4 slices sourdough bread
  • 2 ripe avocados
  • 150g (5 oz) shrimp, peeled and deveined
  • 100g (3.5 oz) smoked salmon
  • 100g (3.5 oz) boursin garlic and herb cheese
  • 100g (3.5 oz) cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1 tbsp unsalted butter
  • 1/2 tsp salt (adjust to taste)

Instructions

  1. Toast the bread slices until golden brown and crisp, about 2-3 minutes.
  2. Mash the avocados in a small bowl with a pinch of salt until smooth but slightly chunky.
  3. Melt the butter in a pan over medium-high heat and sear the shrimp for 2-3 minutes until opaque and pink, then set aside.
  4. Spread a layer of mashed avocado onto each toast slice until ready to serve.
  5. Top the toasts with spoonfuls of Boursin cheese, cherry tomato halves, and red onion slices until ready to serve.
  6. Divide the seared shrimp and smoked salmon among the toasts, serving immediately until ready to serve.
