Vibrant, cozy pasta tossed in a blistered cherry tomato sauce with aromatic garlic and basil.

Ingredients

  • 450g (1 lb) pasta of choice
  • 500g (1.1 lb) cherry tomatoes
  • 4 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, torn
  • 1/2 tsp red pepper flakes
  • 1 tsp kosher salt (adjust to taste)

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta according to package directions until al dente.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering.
  3. Add the cherry tomatoes and cook for 5-7 minutes, stirring occasionally, until they begin to burst and release their juices.
  4. Stir in the sliced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant but not browned.
  5. Transfer the cooked pasta directly into the skillet with the tomatoes, adding 1/4 cup of pasta water to help emulsify the sauce until ready to serve.
  6. Toss everything together over low heat for 1 minute until the sauce coats the pasta evenly.
  7. Remove from heat, stir in the fresh basil, and season with salt to taste before serving until ready to serve.
