Subway-Style Chicken Rice Bowl by Tastewithsonu
Hearty grilled chicken served over fluffy rice with crisp garden vegetables and a signature sauce.

Ingredients
- 200g (1 cup) basmati rice, uncooked
- 300g (10 oz) chicken breast, thinly sliced
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 cup lettuce, shredded
- 1 medium tomato, diced
- 1/2 cup cucumber, sliced
- 1/4 cup dill pickles, sliced
- 3 tbsp mayonnaise
- 1 tbsp sweet onion sauce or honey mustard
Instructions
- Rinse the rice under cold water until the water runs clear, then cook according to package directions until tender, about 15-18 minutes.
- Season the sliced chicken with salt, pepper, paprika, and garlic powder until ready to serve.
- Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes until golden brown and cooked through.
- Prepare the vegetables by shredding the lettuce and dicing the tomatoes and cucumbers until ready to serve.
- Whisk the mayonnaise and sweet onion sauce together in a small bowl to create the signature dressing over medium heat until heated through, about 5 min.
- Assemble the bowls by layering the cooked rice, grilled chicken, and fresh vegetables until ready to serve.
- Drizzle the prepared sauce over the top before serving until ready to serve.
