Subway-Style Chicken Rice Bowl by Tastewithsonu

Hearty grilled chicken served over fluffy rice with crisp garden vegetables and a signature sauce.

Ingredients

  • 200g (1 cup) basmati rice, uncooked
  • 300g (10 oz) chicken breast, thinly sliced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1/2 cup cucumber, sliced
  • 1/4 cup dill pickles, sliced
  • 3 tbsp mayonnaise
  • 1 tbsp sweet onion sauce or honey mustard

Instructions

  1. Rinse the rice under cold water until the water runs clear, then cook according to package directions until tender, about 15-18 minutes.
  2. Season the sliced chicken with salt, pepper, paprika, and garlic powder until ready to serve.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken for 5-6 minutes until golden brown and cooked through.
  4. Prepare the vegetables by shredding the lettuce and dicing the tomatoes and cucumbers until ready to serve.
  5. Whisk the mayonnaise and sweet onion sauce together in a small bowl to create the signature dressing over medium heat until heated through, about 5 min.
  6. Assemble the bowls by layering the cooked rice, grilled chicken, and fresh vegetables until ready to serve.
  7. Drizzle the prepared sauce over the top before serving until ready to serve.
