Leftover Banana Pancakes by Tashi

Fluffy, golden-brown pancakes infused with mashed ripe bananas for a naturally sweet breakfast treat.

Ingredients
- 2 ripe bananas, mashed
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 3/4 cup milk
- 1 egg
- 2 tbsp butter, melted
Instructions
- Mash the bananas in a large bowl until mostly smooth, leaving a few small lumps for texture.
- Whisk in the egg, milk, and melted butter until well combined.
- Fold in the flour, sugar, baking powder, and salt until just combined; do not overmix.
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter per pancake onto the skillet and cook for 2-3 minutes until bubbles form on the surface.
- Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
