Leftover Banana Pancakes by Tashi

Fluffy, golden-brown pancakes infused with mashed ripe bananas for a naturally sweet breakfast treat.

Ingredients

  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk
  • 1 egg
  • 2 tbsp butter, melted

Instructions

  1. Mash the bananas in a large bowl until mostly smooth, leaving a few small lumps for texture.
  2. Whisk in the egg, milk, and melted butter until well combined.
  3. Fold in the flour, sugar, baking powder, and salt until just combined; do not overmix.
  4. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter per pancake onto the skillet and cook for 2-3 minutes until bubbles form on the surface.
  6. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
