Crispy, savory semolina crackers spiced with carom seeds and fried to a golden, crunch-perfect finish.

Ingredients
- 1 cup semolina (suji)
- 1/2 cup all-purpose flour
- 2 tbsp oil (plus extra for brushing)
- 1/2 tsp carom seeds (ajwain)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup warm water (as needed for dough)
Instructions
- Combine semolina, all-purpose flour, salt, carom seeds, and black pepper in a large mixing bowl.
- Add 2 tablespoons of oil and rub into the flour mixture until it resembles coarse breadcrumbs.
- Gradually add warm water while kneading to form a stiff, tight dough; cover and let rest for 15 minutes.
- Divide the dough into small, equal-sized balls and roll each into a thin disc, about 2 inches in diameter.
- Prick each disc multiple times with a fork to prevent them from puffing up like puris.
- Brush the air fryer basket with oil and arrange the mathris in a single layer without overlapping.
- Air fry at 160°C (320°F) for 10–12 minutes, flipping halfway through, until they are golden brown and crisp.
