Zero Carb Noodles by Tashi Malhotra
Light, quick-cooking zero carb noodles served as a healthy, versatile base for any stir-fry.

Ingredients
- 2 packs (400g) zero carb shirataki noodles, drained and rinsed
- 1 tbsp neutral oil (for sautéing)
- 1/4 tsp salt
- 1/2 tsp soy sauce or coconut aminos
Instructions
- Drain the shirataki noodles thoroughly in a colander and rinse under cold water for 1 minute to remove any natural odor.
- Heat a non-stick skillet over medium-high heat and add the noodles to the dry pan, cooking for 2-3 minutes to evaporate excess moisture.
- Add the oil, salt, and soy sauce, tossing continuously for 1 minute until the noodles are well-coated and slightly toasted.
- Serve immediately while hot as a base for your favorite protein or vegetable stir-fry over medium-high heat until fragrant, about 5 min.
