Easy Creamy Spinach Spaghetti by Tashi Malhotra

Creamy spinach spaghetti with garlic, Parmesan, and a gentle chilli kick for a fast weeknight dinner.

Ingredients

  • 200g (7 oz) spaghetti
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 100g (3.5 oz) fresh spinach
  • 120ml (1/2 cup) heavy cream
  • 50g (1/2 cup) Parmesan cheese, grated
  • 1/4 tsp, optional red pepper flakes
  • to taste salt
  • to taste black pepper

Instructions

  1. Cook spaghetti according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach to the skillet in batches, stirring until it wilts down. This should take about 2-3 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, red pepper flakes (if using), salt, and black pepper.
  6. Continue to cook for another 1-2 minutes until the sauce has thickened slightly.
  7. Add the drained spaghetti to the skillet with the sauce. Toss to coat the pasta evenly.
  8. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.
  9. Serve immediately, garnished with extra Parmesan cheese if desired.
