Easy Creamy Spinach Spaghetti by Tashi Malhotra
Creamy spinach spaghetti with garlic, Parmesan, and a gentle chilli kick for a fast weeknight dinner.

Ingredients
- 200g (7 oz) spaghetti
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 100g (3.5 oz) fresh spinach
- 120ml (1/2 cup) heavy cream
- 50g (1/2 cup) Parmesan cheese, grated
- 1/4 tsp, optional red pepper flakes
- to taste salt
- to taste black pepper
Instructions
- Cook spaghetti according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- While the pasta cooks, heat olive oil in a large skillet over medium heat.
- Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Add the fresh spinach to the skillet in batches, stirring until it wilts down. This should take about 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, red pepper flakes (if using), salt, and black pepper.
- Continue to cook for another 1-2 minutes until the sauce has thickened slightly.
- Add the drained spaghetti to the skillet with the sauce. Toss to coat the pasta evenly.
- If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.
- Serve immediately, garnished with extra Parmesan cheese if desired.
