Tender par-cooked potatoes layered with caramelized onions, diced green chiles, heavy cream, and melted cheese.

Ingredients
- 4 large russet potatoes, peeled and par-cooked
- 1 white onion, thinly sliced
- 1/2 cup diced green chiles
- 1 cup heavy cream
- 2 cup melting cheese, shredded (such as monterey jack or cheddar)
- 1 tbsp vegetable oil
- 1 tsp salt
Instructions
- Boil the peeled potatoes until just tender, about 10-12 minutes, then drain and set aside.
- Heat oil in a pan over medium heat, add the sliced onions, and cook on low for 10-15 minutes until caramelized.
- Preheat your oven to 350°F (175°C).
- Thinly slice the par-cooked potatoes.
- Arrange a layer of potato slices in a casserole dish, sprinkle with salt, caramelized onions, green chiles, a drizzle of heavy cream, and a handful of cheese.
- Repeat the layering process until all ingredients are used, finishing with a generous layer of cheese on top.
- Cover the dish with foil and bake for 15 minutes at 350°F.
- Remove the foil and bake for an additional 15 minutes until the cheese is bubbling and the top is golden brown.
