Tender par-cooked potatoes layered with caramelized onions, diced green chiles, heavy cream, and melted cheese.

Ingredients

  • 4 large russet potatoes, peeled and par-cooked
  • 1 white onion, thinly sliced
  • 1/2 cup diced green chiles
  • 1 cup heavy cream
  • 2 cup melting cheese, shredded (such as monterey jack or cheddar)
  • 1 tbsp vegetable oil
  • 1 tsp salt

Instructions

  1. Boil the peeled potatoes until just tender, about 10-12 minutes, then drain and set aside.
  2. Heat oil in a pan over medium heat, add the sliced onions, and cook on low for 10-15 minutes until caramelized.
  3. Preheat your oven to 350°F (175°C).
  4. Thinly slice the par-cooked potatoes.
  5. Arrange a layer of potato slices in a casserole dish, sprinkle with salt, caramelized onions, green chiles, a drizzle of heavy cream, and a handful of cheese.
  6. Repeat the layering process until all ingredients are used, finishing with a generous layer of cheese on top.
  7. Cover the dish with foil and bake for 15 minutes at 350°F.
  8. Remove the foil and bake for an additional 15 minutes until the cheese is bubbling and the top is golden brown.
