Ingredients

  • 680g (1.5 lb) chuck roast, finely chopped
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp onion powder
  • 2 tbsp vegetable oil (for searing)
  • 1 red bell pepper, finely chopped
  • 0.5 onion, diced
  • 2 roma tomatoes, diced
  • 2 tbsp garlic, minced
  • 1 tbsp tomato paste
  • 1 packet sazon seasoning
  • 1 cup green chili rajas
  • 1 cup chicken or beef broth
  • 8 corn tortillas
  • 1 cup melting cheese (e.g., oaxaca or monterey jack), shredded

Instructions

  1. Season the chopped chuck roast with salt, garlic powder, paprika, and onion powder
  2. Heat 1 tbsp oil in a pan over medium heat, sear the beef until browned, then remove and set aside.
  3. Add the bell pepper, onion, and tomatoes to the same pan and sauté for 3-5 minutes until softened.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Return the cooked beef to the pan and stir in the tomato paste, Sazon, green chili rajas, and broth.
  6. Simmer the mixture for 10-15 minutes until the liquid has reduced and flavors have melded.
  7. Warm the corn tortillas, top each with a portion of the beef mixture and cheese, then fold in half
  8. Heat a clean skillet with remaining oil over medium-high heat and fry the tacos for 2-3 minutes per side until golden and crispy.
