Nepal's viral street-style chatpat bowl with tangy gilo sauce, fried noodles, and fresh vegetables.

Ingredients
- 2 packs instant spicy noodles (with seasoning packet, e.g. Wai Wai or similar)
- 2 tbsp oil (for frying noodles)
- 3 tbsp chickpea flour (besan)
- 1 cup water
- 1/4 tsp food coloring (yellow or orange)
- 1/2 tsp salt
- 1/2 tsp chili powder or tamarind paste (for tang)
- 1/2 cup cucumber, finely diced
- 1/2 cup tomato, finely diced
- 2 green chilies, finely chopped
- 1 tbsp lemon juice
- 1 tsp chaat masala or magic masala seasoning
- 1/4 cup boiled or canned chickpeas (optional)
Instructions
- Crush the instant noodles into small pieces and fry in 2 tbsp oil over medium heat for 3–4 minutes, stirring constantly, until golden and crispy. Toss with the noodle seasoning packet and set aside.
- In a small saucepan, whisk together chickpea flour and water until smooth with no lumps. Add food coloring, salt, and chili powder or tamarind paste.
- Cook the flour mixture over medium heat for 5–6 minutes, stirring continuously, until it thickens into a pourable sauce consistency. Remove from heat and let cool slightly — this is the gilo sauce.
- Dice cucumber, tomato, and green chilies and arrange them in a wide bowl or plate.
- Add the fried noodles and chickpeas (if using) to the bowl. Sprinkle chaat masala over everything.
- Drizzle the gilo sauce generously over the top, squeeze lemon juice over the bowl, toss lightly, and serve immediately before the noodles soften.
