Waldorf Salad Chicory Bites with Pomegranate by Tanerxaydin

Waldorf Salad Chicory Bites with Pomegranate made with chicory leaves, green apple and celery.

Ingredients

  • 2 heads chicory leaves, separated and washed
  • 1 medium green apple, cored and diced
  • 2 stalks celery, finely diced
  • 1/2 cup pomegranate seeds
  • 1/2 cup roasted walnuts, chopped
  • 1/4 cup mild gorgonzola, crumbled
  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 1/2 lemon, juiced
  • 1/4 tsp salt, or to taste
  • 1/8 tsp black pepper, or to taste
  • 2 tbsp fresh chervil, chopped

Instructions

  1. Wash and thoroughly dry the chicory leaves; set aside the prettiest, larger leaves for serving.
  2. In a medium bowl, combine the diced green apple, diced celery, pomegranate seeds, and chopped roasted walnuts.
  3. In a small bowl, whisk together the mayonnaise, plain yogurt, and fresh lemon juice until smooth. Season with salt and pepper to taste.
  4. Pour the dressing over the apple mixture and gently fold until all ingredients are evenly coated. Stir in the crumbled gorgonzola.
  5. Spoon a generous amount of the Waldorf salad mixture into each chicory leaf, arranging them on a serving platter.
  6. Garnish the filled chicory bites with fresh chopped chervil just before serving for an elegant finish.
