Waldorf Salad Chicory Bites with Pomegranate made with chicory leaves, green apple and celery.

Ingredients
- 2 heads chicory leaves, separated and washed
- 1 medium green apple, cored and diced
- 2 stalks celery, finely diced
- 1/2 cup pomegranate seeds
- 1/2 cup roasted walnuts, chopped
- 1/4 cup mild gorgonzola, crumbled
- 1/4 cup mayonnaise
- 1/4 cup plain yogurt
- 1/2 lemon, juiced
- 1/4 tsp salt, or to taste
- 1/8 tsp black pepper, or to taste
- 2 tbsp fresh chervil, chopped
Instructions
- Wash and thoroughly dry the chicory leaves; set aside the prettiest, larger leaves for serving.
- In a medium bowl, combine the diced green apple, diced celery, pomegranate seeds, and chopped roasted walnuts.
- In a small bowl, whisk together the mayonnaise, plain yogurt, and fresh lemon juice until smooth. Season with salt and pepper to taste.
- Pour the dressing over the apple mixture and gently fold until all ingredients are evenly coated. Stir in the crumbled gorgonzola.
- Spoon a generous amount of the Waldorf salad mixture into each chicory leaf, arranging them on a serving platter.
- Garnish the filled chicory bites with fresh chopped chervil just before serving for an elegant finish.
