Savoury Spinach Dutch Baby by Tanerxaydin

Puffed spinach and cottage cheese Dutch baby served with braised cherry tomatoes and dressed fresh arugula.

Ingredients
- 5 large eggs
- 100g fresh spinach
- 1/4 cup fresh parsley, chopped
- 100g cottage cheese
- 90ml water
- 3 tbsp all-purpose flour
- 1/2 tsp salt (for batter)
- 1/4 tsp black pepper (for batter)
- 1 tbsp unsalted butter
- 200g cherry tomatoes, halved
- 1 tbsp olive oil (for tomatoes)
- 1/4 tsp sugar
- 1 tsp dried herbs (thyme, oregano, or basil)
- 50g arugula (rocket salad)
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil (for arugula)
- 1/4 tsp salt (for arugula)
- 50g feta cheese, crumbled
- 1 tbsp fresh chopped herbs (optional, for garnish)
- 1/4 tsp chili flakes (optional, for garnish)
Instructions
- Preheat your oven to 200°C (400°F).
- In a blender, combine eggs, spinach, parsley, cottage cheese, water, flour, 1/2 tsp salt, and 1/4 tsp pepper. Blend until you have a smooth batter, about 30-60 seconds.
- Place an oven-safe skillet (about 10-12 inches) in the preheated oven for 5 minutes to heat thoroughly. Carefully remove the hot skillet, add 1 tbsp butter, and let it melt completely, swirling to coat the bottom and sides of the skillet. Pour the batter into the hot skillet and immediately return it to the oven. Bake for 20 minutes until the Dutch baby is puffed and golden brown.
- Meanwhile, prepare the braised tomatoes. Place the halved cherry tomatoes in a small saucepan with 1 tbsp olive oil and 1/4 tsp sugar. Cook over medium heat for about 15 minutes, stirring occasionally, until softened and slightly saucy. Add 1 tsp dried herbs (thyme or oregano) during the last 5 minutes of cooking for extra flavor.
- Wash and thoroughly dry the arugula. In a bowl, toss the arugula with 1 tbsp apple cider vinegar, 1 tbsp olive oil, and 1/4 tsp salt to lightly marinate for 5 minutes.
- When the Dutch baby is ready, remove it from the oven and let it cool slightly for 2-3 minutes. Quarter it and serve immediately with the braised tomatoes, marinated arugula, and crumbled feta. Optionally, garnish with fresh chopped herbs or a sprinkle of chili flakes for added heat.
