Salmon Crudo with Caramelized Leek & Passion Fruit-Yuzu Miso by Tanerxaydin

Silky salmon slices layered with caramelized leek, a punchy yuzu-miso dressing with passion fruit, and herbaceous chive oil.

Ingredients
- 200g (7 oz) sashimi-grade salmon fillet, skin removed
- 1 medium leek, white and light green parts only, thinly sliced
- 1 tbsp neutral oil, plus more for chive oil
- 1 tbsp white miso paste
- 2 tbsp yuzu juice
- 1 passion fruit, pulp scooped out
- 1/4 cup fresh chives, finely chopped
- 1/4 tsp sea salt, plus more to taste
- 1/2 tsp black pepper
Instructions
- Prepare the chive oil: In a small blender, combine the chopped chives and 1/4 cup neutral oil. Blend until smooth and vibrant green, about 1 minute. Strain through a fine-mesh sieve, pressing to extract all oil. Set aside.
- Caramelize the leek: Heat 1 tbsp neutral oil in a small pan over medium-low heat. Add the thinly sliced leek and a pinch of salt. Cook, stirring occasionally, for 10-15 minutes, or until the leek is very soft and deeply golden brown.
- Make the dressing: In a small bowl, whisk together the white miso paste, yuzu juice, passion fruit pulp, and 1 tbsp neutral oil until well combined and smooth.
- Prepare the salmon: Using a very sharp knife, thinly slice the salmon fillet against the grain into uniform pieces, about 1/8-inch thick.
- Assemble the crudo: Arrange the salmon slices on a serving platter. Lightly sprinkle with sea salt and black pepper. Top each slice with a small amount of caramelized leek. Drizzle generously with the passion fruit-yuzu miso dressing and then with the chive oil. Serve immediately.
