Oatmeal Banana Cookies with White Chocolate by Tanerxaydin

Oatmeal Banana Cookies with White Chocolate made with rolled oats, ripe bananas and chia seeds.

Ingredients

  • 1.5 cup rolled oats (mix of large and finer)
  • 2 medium ripe bananas, mashed
  • 2 tbsp chia seeds
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/4 cup skyr (or coconut yogurt for vegan)
  • 1/2 tsp sea salt
  • 1 tsp winter spices (e.g., cinnamon, nutmeg)
  • 1 tsp baking powder
  • 1/2 cup white chocolate chips
  • 1/2 cup regular chocolate chips (or dark chocolate pieces)

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the ripe bananas thoroughly. Stir in the melted coconut oil, vanilla extract, and skyr until well combined.
  3. In a separate medium bowl, whisk together the rolled oats, chia seeds, sea salt, winter spices, and baking powder
  4. Add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips and regular chocolate chips.
  5. Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
  6. Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
