Oatmeal Banana Cookies with White Chocolate made with rolled oats, ripe bananas and chia seeds.

Ingredients
- 1.5 cup rolled oats (mix of large and finer)
- 2 medium ripe bananas, mashed
- 2 tbsp chia seeds
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 1/4 cup skyr (or coconut yogurt for vegan)
- 1/2 tsp sea salt
- 1 tsp winter spices (e.g., cinnamon, nutmeg)
- 1 tsp baking powder
- 1/2 cup white chocolate chips
- 1/2 cup regular chocolate chips (or dark chocolate pieces)
Instructions
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, mash the ripe bananas thoroughly. Stir in the melted coconut oil, vanilla extract, and skyr until well combined.
- In a separate medium bowl, whisk together the rolled oats, chia seeds, sea salt, winter spices, and baking powder
- Add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips and regular chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving some space between each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden and the cookies are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
