Miso Broiled Cod with Sautéed Swiss Chard by Tanerxaydin

Tender miso-marinated cod with crispy edges, served alongside garlicky Swiss chard and spicy cucumber salad.

Ingredients
- 2 cod fillets (approx. 150g each)
- 2 tbsp white miso paste
- 1 tbsp mirin
- 1 tbsp sake
- 1 tsp granulated sugar
- 200g swiss chard, stems trimmed and chopped
- 2 cloves garlic, minced
- 1 tbsp trout roe (for garnish)
- 1 cucumber, thinly sliced
- 1 tsp chili oil
- 1 tsp rice vinegar
- 1 tbsp neutral oil
Instructions
- Whisk together miso, mirin, sake, and sugar in a small bowl until smooth.
- Coat cod fillets evenly with the miso mixture and let marinate for 15 minutes at room temperature.
- Preheat your oven broiler to high.
- Place cod on a foil-lined baking sheet and broil for 8-10 minutes until the top is caramelized and the fish flakes easily with a fork.
- Toss sliced cucumber with chili oil and rice vinegar in a small bowl; set aside.
- Heat neutral oil in a skillet over medium heat, add minced garlic, and sauté for 30 seconds until fragrant.
- Add Swiss chard to the skillet and cook for 3-4 minutes until just wilted.
- Serve the broiled cod topped with a spoonful of trout roe, alongside the sautéed chard and cucumber salad
