  • 1 tbsp mirin
  • 1 tbsp sake
  • 1 tsp granulated sugar
  • 200g swiss chard, stems trimmed and chopped
  • 2 cloves garlic, minced
  • 1 tbsp trout roe (for garnish)
  • 1 cucumber, thinly sliced
  • 1 tsp chili oil
  • 1 tsp rice vinegar
  • 1 tbsp neutral oil

Instructions

  1. Whisk together miso, mirin, sake, and sugar in a small bowl until smooth.
  2. Coat cod fillets evenly with the miso mixture and let marinate for 15 minutes at room temperature.
  3. Preheat your oven broiler to high.
  4. Place cod on a foil-lined baking sheet and broil for 8-10 minutes until the top is caramelized and the fish flakes easily with a fork.
