Korean Marinated Eggs (Mayak Gyeran) by Tanerxaydin

Soft-boiled eggs marinated in a savory soy sauce blend with sliced garlic, ginger, and red chili.

Ingredients
- 6 eggs
- 100 ml soy sauce
- 100 ml water
- 100 ml rice syrup (or honey)
- 100 ml mirin
- 2 cloves garlic, sliced
- 1-inch piece ginger, sliced
- 1 red chili, sliced
- 1 tsp sesame oil
- 1 tbsp sesame seeds
Instructions
- Bring a pot of water to a rolling boil. Carefully add the eggs and cook for exactly 6 minutes. Immediately transfer the cooked eggs to an ice bath to stop the cooking process. Once cooled, gently peel the eggs and set them aside.
- In a bowl or container, combine the soy sauce, water, rice syrup (or honey), mirin, sliced garlic, sliced ginger, sliced chili, sesame oil, and sesame seeds. Mix well with a spoon until all ingredients are thoroughly combined to create the marinade.
- Place the peeled eggs into the prepared marinade, ensuring they are fully submerged in the liquid. Cover the bowl or container tightly and refrigerate for at least 6 hours, or ideally overnight, for the best flavor development.
- To serve, enjoy the marinated eggs as a quick snack, or slice them in half and arrange them over warm cooked rice, drizzling some of the marinade on top for extra flavor.
