Korean Marinated Eggs (Mayak Gyeran) by Tanerxaydin

Soft-boiled eggs marinated in a savory soy sauce blend with sliced garlic, ginger, and red chili.

Ingredients

  • 6 eggs
  • 100 ml soy sauce
  • 100 ml water
  • 100 ml rice syrup (or honey)
  • 100 ml mirin
  • 2 cloves garlic, sliced
  • 1-inch piece ginger, sliced
  • 1 red chili, sliced
  • 1 tsp sesame oil
  • 1 tbsp sesame seeds

Instructions

  1. Bring a pot of water to a rolling boil. Carefully add the eggs and cook for exactly 6 minutes. Immediately transfer the cooked eggs to an ice bath to stop the cooking process. Once cooled, gently peel the eggs and set them aside.
  2. In a bowl or container, combine the soy sauce, water, rice syrup (or honey), mirin, sliced garlic, sliced ginger, sliced chili, sesame oil, and sesame seeds. Mix well with a spoon until all ingredients are thoroughly combined to create the marinade.
  3. Place the peeled eggs into the prepared marinade, ensuring they are fully submerged in the liquid. Cover the bowl or container tightly and refrigerate for at least 6 hours, or ideally overnight, for the best flavor development.
  4. To serve, enjoy the marinated eggs as a quick snack, or slice them in half and arrange them over warm cooked rice, drizzling some of the marinade on top for extra flavor.
