Ingredients

  • 1 cup roasted blue cornmeal
  • 1 teaspoon juniper ash (optional, for flavor and calcium)
  • 4 cups water
  • 1/4 teaspoon salt (optional)
  • 1/2 cup fresh or frozen berries (for topping)
  • 2 tablespoons honey (for topping)
  • 1/4 cup pinole (optional, for topping)

Instructions

  1. In a medium saucepan, whisk together the roasted blue cornmeal, juniper ash (if using), and salt (if using) with the water until well combined and no lumps remain.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly to prevent sticking.
  3. Continue to cook, stirring frequently, for about 8-10 minutes, or until the mush has thickened to your desired consistency. It should be thick but still pourable.
  4. Pour the blue corn mush into serving bowls.
  5. Top each bowl with fresh berries, a drizzle of honey, and a sprinkle of pinole (if using).
