Ingredients
- 1 cup roasted blue cornmeal
- 1 teaspoon juniper ash (optional, for flavor and calcium)
- 4 cups water
- 1/4 teaspoon salt (optional)
- 1/2 cup fresh or frozen berries (for topping)
- 2 tablespoons honey (for topping)
- 1/4 cup pinole (optional, for topping)
Instructions
- In a medium saucepan, whisk together the roasted blue cornmeal, juniper ash (if using), and salt (if using) with the water until well combined and no lumps remain.
- Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly to prevent sticking.
- Continue to cook, stirring frequently, for about 8-10 minutes, or until the mush has thickened to your desired consistency. It should be thick but still pourable.
- Pour the blue corn mush into serving bowls.
- Top each bowl with fresh berries, a drizzle of honey, and a sprinkle of pinole (if using).
