Salt and Chili Chicken Fried Rice by Takingmeals

Tender chicken and fluffy white rice stir-fried with vibrant peppers, aromatic chili, and savory soy sauce.

Ingredients

  • 320g chicken breast, diced
  • 1 bag (250g) microwave white rice
  • 1 red pepper, diced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 fresh chili, finely sliced
  • 75g frozen peas
  • 2 tbsp dark soy sauce
  • 1 tsp chinese five spice
  • 1 tsp msg
  • 1 tbsp vegetable oil

Instructions

  1. Heat oil in a wok or large pan over medium-high heat.
  2. Add diced chicken breast to the pan and cook for 5-6 minutes until browned and cooked through; remove and set aside.
  3. Add onions and red peppers to the same pan, sautéing for 3-4 minutes until softened.
  4. Stir in minced garlic and fresh chili, cooking for 1 minute until fragrant.
  5. Add the cooked chicken back to the pan along with the peas and dark soy sauce, stirring to combine.
  6. Add the microwave rice, Chinese five spice, and MSG, breaking up the rice and stir-frying for 2-3 minutes until heated through and well incorporated.
