Tender chicken and egg noodles tossed with crisp bean sprouts in a savory soy-based sauce.

Ingredients

  • 400g chicken breast, diced
  • 2 medium egg noodle nests
  • 100g bean sprouts
  • 1/2 onion, sliced
  • 2 garlic cloves, minced
  • 2 green onion, sliced
  • 4 tbsp dark soy sauce (divided)
  • 1/2 tsp salt
  • 1/4 tsp msg (optional)
  • 1 tbsp cooking oil

Instructions

  1. Cook the egg noodles according to package instructions, then drain and set aside to cool slightly to prevent sticking.
  2. Heat oil in a large pan or wok over high heat and add the sliced onion and diced chicken.
  3. Season the chicken with salt and MSG, stir in 3 tablespoons of dark soy sauce, and cook until the chicken is browned, about 5-7 minutes.
  4. Add the minced garlic to the pan and stir-fry for 1 minute until fragrant.
  5. Add the cooled noodles to the pan and toss thoroughly with the chicken mixture.
  6. Stir in the sliced spring onions and the remaining tablespoon of dark soy sauce, tossing to combine and coat evenly.
  7. Add the bean sprouts and stir-fry for 1-2 minutes just until warmed through and slightly softened, then serve immediately.
