Low-Calorie Chicken Chow Mein by Takingmeals

Tender chicken and egg noodles tossed with crisp bean sprouts in a savory soy-based sauce.

Ingredients
- 400g chicken breast, diced
- 2 medium egg noodle nests
- 100g bean sprouts
- 1/2 onion, sliced
- 2 garlic cloves, minced
- 2 green onion, sliced
- 4 tbsp dark soy sauce (divided)
- 1/2 tsp salt
- 1/4 tsp msg (optional)
- 1 tbsp cooking oil
Instructions
- Cook the egg noodles according to package instructions, then drain and set aside to cool slightly to prevent sticking.
- Heat oil in a large pan or wok over high heat and add the sliced onion and diced chicken.
- Season the chicken with salt and MSG, stir in 3 tablespoons of dark soy sauce, and cook until the chicken is browned, about 5-7 minutes.
- Add the minced garlic to the pan and stir-fry for 1 minute until fragrant.
- Add the cooled noodles to the pan and toss thoroughly with the chicken mixture.
- Stir in the sliced spring onions and the remaining tablespoon of dark soy sauce, tossing to combine and coat evenly.
- Add the bean sprouts and stir-fry for 1-2 minutes just until warmed through and slightly softened, then serve immediately.
