Hunters Chicken Jacket Potato Tray Bake by Superhomecook

Crispy roasted potatoes topped with tender chicken, smoky bacon, melted cheddar, and sweet barbecue sauce.

Ingredients

  • 4 large baking potatoes, cut into wedges
  • 2 tbsp olive oil
  • 4 chicken breasts, cut into bite-sized pieces
  • 8 slices bacon, chopped
  • 1/2 cup barbecue sauce
  • 2 cup cheddar cheese, shredded
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Toss potato wedges with olive oil, salt, and pepper on a large baking tray and roast for 25 minutes until starting to soften.
  3. Add chicken pieces and chopped bacon to the tray, tossing to combine with the potatoes, and roast for another 15 minutes.
  4. Drizzle the barbecue sauce over the chicken and potatoes, then top evenly with shredded cheese until ready to serve.
  5. Bake for a final 10 minutes or until the cheese is bubbling and golden and the chicken is cooked through.
