Hunters Chicken Jacket Potato Tray Bake by Superhomecook
Crispy roasted potatoes topped with tender chicken, smoky bacon, melted cheddar, and sweet barbecue sauce.

Ingredients
- 4 large baking potatoes, cut into wedges
- 2 tbsp olive oil
- 4 chicken breasts, cut into bite-sized pieces
- 8 slices bacon, chopped
- 1/2 cup barbecue sauce
- 2 cup cheddar cheese, shredded
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 200°C (400°F).
- Toss potato wedges with olive oil, salt, and pepper on a large baking tray and roast for 25 minutes until starting to soften.
- Add chicken pieces and chopped bacon to the tray, tossing to combine with the potatoes, and roast for another 15 minutes.
- Drizzle the barbecue sauce over the chicken and potatoes, then top evenly with shredded cheese until ready to serve.
- Bake for a final 10 minutes or until the cheese is bubbling and golden and the chicken is cooked through.
