Creamy rolled oats topped with caramelized peaches, warm cinnamon, and a hint of vanilla bean.

Ingredients

  • 1 cup old fashioned rolled oats
  • 2 cup water or milk
  • 2 cup peaches, sliced (fresh or canned)
  • 3 tbsp brown sugar, packed
  • 1 tbsp unsalted butter
  • 1/2 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. Melt butter in a small skillet over medium heat, then add sliced peaches and 1 tablespoon of brown sugar.
  2. Cook the peaches for 5-7 minutes, stirring occasionally until they are soft and the sugar has caramelized slightly.
  3. Combine oats, liquid, and a pinch of salt in a saucepan over medium-high heat.
  4. Bring to a boil, then reduce heat to low and simmer for 5 minutes, or until the oats reach your desired consistency.
  5. Stir in the vanilla extract, cinnamon, and remaining brown sugar into the cooked oatmeal.
  6. Serve the warm oatmeal topped with the caramelized peach mixture.
