Brown Sugar Peach Oatmeal by Sundaydinnermoval
Creamy rolled oats topped with caramelized peaches, warm cinnamon, and a hint of vanilla bean.

Ingredients
- 1 cup old fashioned rolled oats
- 2 cup water or milk
- 2 cup peaches, sliced (fresh or canned)
- 3 tbsp brown sugar, packed
- 1 tbsp unsalted butter
- 1/2 tsp ground cinnamon
- 1/2 tsp vanilla extract
- 1/2 tsp salt
Instructions
- Melt butter in a small skillet over medium heat, then add sliced peaches and 1 tablespoon of brown sugar.
- Cook the peaches for 5-7 minutes, stirring occasionally until they are soft and the sugar has caramelized slightly.
- Combine oats, liquid, and a pinch of salt in a saucepan over medium-high heat.
- Bring to a boil, then reduce heat to low and simmer for 5 minutes, or until the oats reach your desired consistency.
- Stir in the vanilla extract, cinnamon, and remaining brown sugar into the cooked oatmeal.
- Serve the warm oatmeal topped with the caramelized peach mixture.
