Refreshing holiday fruit salad featuring pineapple, mandarin oranges, and grapes in a creamy yogurt dressing.

Ingredients
- 2 cup miniature marshmallows
- 3/4 cup sweetened coconut flakes
- 15 oz mandarin oranges, drained
- 1/2 cup maraschino cherries, halved
- 4 oz pineapple tidbits, drained
- 1 cup seedless green grapes, halved
- 3/4 cup heavy cream
- 1/4 cup powdered sugar
- 1/8 tsp salt
- 1/2 tsp vanilla extract
- 1/2 tsp lemon zest
- 1 tbsp lemon juice
- 1/2 cup honey vanilla greek yogurt
Instructions
- Zest the lemon to obtain 1/2 teaspoon of zest and juice it to get 1 tablespoon of juice; set both aside.
- Combine the marshmallows, coconut, drained oranges, halved cherries, drained pineapple, and grapes in a large mixing bowl, stirring gently to combine.
- Whip the heavy cream, powdered sugar, salt, and vanilla extract in a separate large bowl using an electric mixer until stiff peaks form.
- Fold the lemon juice, lemon zest, and Greek yogurt into the whipped cream mixture until fully incorporated.
- Pour the dressing over the fruit and marshmallow mixture, folding gently with a spatula until all ingredients are evenly coated.
- Cover the bowl and refrigerate for 30 to 60 minutes before serving, stirring once more just before plating.
