Stealth Health 500 Calorie Chicken Fried Rice made with chicken breast, garlic powder and soy sauce.

Serves: 5Prep: 15 minutesCook: 20 minutes

Ingredients

  • 25 oz chicken breast, thin sliced and diced
  • 1 tbsp garlic powder
  • 2 tbsp soy sauce (for marinade)
  • 1 tbsp avocado oil (or olive oil, for marinade)
  • 1 tbsp sriracha (for marinade)
  • 300g mixed frozen vegetables (carrots, peas, mushrooms, onions)
  • 200g egg whites
  • 3 whole eggs
  • 700g day-old cooked rice (from ~300g dry weight)
  • 3 tbsp soy sauce (for finishing)
  • 3 tbsp toasted sesame oil

Instructions

  1. In a bowl, combine the sliced and diced chicken breast with 1 tablespoon garlic powder, 2 tablespoons soy sauce, 1 tablespoon avocado oil, and 1 tablespoon sriracha. Toss to marinate.
  2. In a separate bowl, whisk together the 200g egg whites and 3 whole eggs until combined.
  3. Heat a large pan or wok over high heat. Cook the marinated chicken in 2 batches for about 2-3 minutes per side, until cooked through. Remove chicken from the pan and set aside.
  4. Add the 300g of mixed frozen vegetables to the same pan. Cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  5. Push the vegetables to one side of the pan. Pour the egg mixture into the empty side of the pan.
  6. Scramble the eggs until fully cooked, then toss them with the vegetables.
  7. Add the 700g of day-old cooked rice to the pan. Break up any clumps and toss everything together with the vegetables and eggs until heated through, about 3-5 minutes.
  8. Add 3 tablespoons of soy sauce and 3 tablespoons of toasted sesame oil to the rice mixture. Stir well to combine and ensure even distribution.
  9. Return the cooked chicken to the pan. Toss everything together for another 1-2 minutes until the chicken is heated through and all ingredients are well combined.
