Stealth Health 500 Calorie Chicken Fried Rice made with chicken breast, garlic powder and soy sauce.

Ingredients
- 25 oz chicken breast, thin sliced and diced
- 1 tbsp garlic powder
- 2 tbsp soy sauce (for marinade)
- 1 tbsp avocado oil (or olive oil, for marinade)
- 1 tbsp sriracha (for marinade)
- 300g mixed frozen vegetables (carrots, peas, mushrooms, onions)
- 200g egg whites
- 3 whole eggs
- 700g day-old cooked rice (from ~300g dry weight)
- 3 tbsp soy sauce (for finishing)
- 3 tbsp toasted sesame oil
Instructions
- In a bowl, combine the sliced and diced chicken breast with 1 tablespoon garlic powder, 2 tablespoons soy sauce, 1 tablespoon avocado oil, and 1 tablespoon sriracha. Toss to marinate.
- In a separate bowl, whisk together the 200g egg whites and 3 whole eggs until combined.
- Heat a large pan or wok over high heat. Cook the marinated chicken in 2 batches for about 2-3 minutes per side, until cooked through. Remove chicken from the pan and set aside.
- Add the 300g of mixed frozen vegetables to the same pan. Cook for 3-5 minutes, stirring occasionally, until tender-crisp.
- Push the vegetables to one side of the pan. Pour the egg mixture into the empty side of the pan.
- Scramble the eggs until fully cooked, then toss them with the vegetables.
- Add the 700g of day-old cooked rice to the pan. Break up any clumps and toss everything together with the vegetables and eggs until heated through, about 3-5 minutes.
- Add 3 tablespoons of soy sauce and 3 tablespoons of toasted sesame oil to the rice mixture. Stir well to combine and ensure even distribution.
- Return the cooked chicken to the pan. Toss everything together for another 1-2 minutes until the chicken is heated through and all ingredients are well combined.
