15-Minute Achari Pulao by Spoonsofflavour
Fragrant basmati rice infused with aromatic whole spices and a tangy pickle-inspired spice blend.

Ingredients
- 200g (1 cup) basmati rice, rinsed and soaked
- 1 tbsp ghee
- 1 tbsp vegetable oil
- 1 bay leaf
- 1 black cardamom
- 3 cloves
- 1 tsp achari masala (pickle spice mix)
- 480ml (2 cup) water
- 1/2 tsp salt
Instructions
- Heat ghee and oil in a heavy-bottomed pot or pressure cooker over medium-high heat for 1 minute.
- Add bay leaf, black cardamom, and cloves, sautéing for 30 seconds until fragrant.
- Stir in the achari masala and cook for 30 seconds to release the oils over medium heat until softened, about 5 min.
- Add the soaked rice to the pot and gently toss to coat for 1 minute.
- Pour in the water and add salt, bringing the mixture to a boil over high heat.
- Reduce heat to low, cover tightly, and simmer for 10-12 minutes until the water is absorbed and rice is tender.
