Fragrant basmati rice infused with aromatic whole spices and a tangy pickle-inspired spice blend.

Ingredients

  • 200g (1 cup) basmati rice, rinsed and soaked
  • 1 tbsp ghee
  • 1 tbsp vegetable oil
  • 1 bay leaf
  • 1 black cardamom
  • 3 cloves
  • 1 tsp achari masala (pickle spice mix)
  • 480ml (2 cup) water
  • 1/2 tsp salt

Instructions

  1. Heat ghee and oil in a heavy-bottomed pot or pressure cooker over medium-high heat for 1 minute.
  2. Add bay leaf, black cardamom, and cloves, sautéing for 30 seconds until fragrant.
  3. Stir in the achari masala and cook for 30 seconds to release the oils over medium heat until softened, about 5 min.
  4. Add the soaked rice to the pot and gently toss to coat for 1 minute.
  5. Pour in the water and add salt, bringing the mixture to a boil over high heat.
  6. Reduce heat to low, cover tightly, and simmer for 10-12 minutes until the water is absorbed and rice is tender.
