Creamy Bacon and Corn Dip by Spinachandbacon

Savory, decadent dip featuring crispy bacon and sweet corn in a creamy cheese base.

Ingredients

  • 6 slices bacon, chopped
  • 2 cup frozen corn, thawed
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup green onions, sliced

Instructions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy, about 8-10 minutes, then remove and drain on paper towels.
  2. Add the corn to the same skillet with the bacon fat and sauté for 5 minutes until lightly browned.
  3. Stir in the softened cream cheese, sour cream, garlic powder, and paprika until smooth and well combined.
  4. Fold in half of the crispy bacon and half of the shredded cheddar cheese.
  5. Transfer the mixture to a baking dish and top with the remaining cheese and bacon until ready to serve.
  6. Bake at 375°F (190°C) for 10-12 minutes until the cheese is melted and bubbling.
