Ingredients

  • 4 chicken breasts
  • 1 cup parmesan cheese, grated
  • 1 cup panko breadcrumbs
  • 2 large eggs, beaten
  • 2 lb potatoes, peeled and cubed
  • 1 lb asparagus, trimmed
  • 4 tbsp butter
  • 1/4 cup milk
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil cubed potatoes in salted water for 15-20 minutes until fork-tender, then drain and mash with butter and milk.
  3. Whisk eggs in a bowl; mix parmesan, breadcrumbs, garlic powder, salt, and pepper in a separate shallow dish
  4. Dip chicken breasts into beaten eggs, then coat thoroughly in the parmesan mixture.
  5. Place chicken on a lined baking sheet and bake for 20-25 minutes until golden and internal temperature reaches 165°F.
  6. Roast or steam asparagus with a drizzle of oil for 8-10 minutes until tender-crisp.
  7. Serve the chicken alongside the mashed potatoes and asparagus.
