Ingredients
- 4 chicken breasts
- 1 cup parmesan cheese, grated
- 1 cup panko breadcrumbs
- 2 large eggs, beaten
- 2 lb potatoes, peeled and cubed
- 1 lb asparagus, trimmed
- 4 tbsp butter
- 1/4 cup milk
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Boil cubed potatoes in salted water for 15-20 minutes until fork-tender, then drain and mash with butter and milk.
- Whisk eggs in a bowl; mix parmesan, breadcrumbs, garlic powder, salt, and pepper in a separate shallow dish
- Dip chicken breasts into beaten eggs, then coat thoroughly in the parmesan mixture.
- Place chicken on a lined baking sheet and bake for 20-25 minutes until golden and internal temperature reaches 165°F.
- Roast or steam asparagus with a drizzle of oil for 8-10 minutes until tender-crisp.
- Serve the chicken alongside the mashed potatoes and asparagus.
