Ingredients

  • 4 large eggs
  • 1 tbsp lemon juice, freshly squeezed
  • 1 serrano pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp chili oil
  • 1/4 tsp salt (adjust to taste)

Instructions

  1. Place eggs in a saucepan and cover with cold water by 1 inch.
  2. Bring water to a boil over high heat, then remove from heat, cover, and let sit for 9-10 minutes for hard-boiled eggs.
  3. Transfer eggs to an ice bath for 5 minutes to stop cooking, then peel carefully.
  4. Slice the peeled eggs into halves or quarters and place in a mixing bowl.
  5. Add the diced serrano pepper, red onion, cilantro, lemon juice, and chili oil to the bowl.
