- 4 large eggs
- 1 tbsp lemon juice, freshly squeezed

- 1/4 tsp salt (adjust to taste)
Instructions
- Place eggs in a saucepan and cover with cold water by 1 inch.
- Bring water to a boil over high heat, then remove from heat, cover, and let sit for 9-10 minutes for hard-boiled eggs.
- Transfer eggs to an ice bath for 5 minutes to stop cooking, then peel carefully.
- Slice the peeled eggs into halves or quarters and place in a mixing bowl.
- Add the diced serrano pepper, red onion, cilantro, lemon juice, and chili oil to the bowl.
- Toss gently to combine, ensuring the eggs are well-coated with the aromatics and oil.
